Breakfast Banana Chia Pudding

This recipe is great for busy people who tend to find themselves in a bit of a rush in the morning, as it is best prepared the night before and can be easily transported to your place of work. Chia seeds are also known to keep you full and satisfied for a long time – they will get you through the morning without thinking about your next meal.

Recipe:
1/4 cup chia seeds
1 cup plant-based milk
2 tbsp maple syrup
1 mashed banana
2 tsp brown sugar
splash of plant-based milk

Method:
Step 1: First, prepare the banana part of the recipe, by placing a small pot on low/medium heat. Add a small amount of oil if your pot is not non-stick and then add the banana, brown sugar, and splash of plant-based milk. Continue stirring until the banana mixture has melded together. Then after a few minutes take the pot off the heat to cool.

Step 2: While the banana mixture is cooling in a bowl mix together the chia, 1 cup of plant milk, and the maple syrup. Let sit for at least 15 minutes.

Step 3: Once the banana is about room temperature place in the bottom of a jar or a container of choice. Then add the chia seed mixture on top.

Step 4: Place the jar or container in the fridge to set for at least 3 hours but preferably overnight.
